Problem with phalaenopsis

Hi

I am relatively new to the field of orchid growing. We have a conservatory that I have been using as a greenhouse for the last four years. Our conservatory faces south, with direct light reaching the orchid shelves around 2 pm and continuing until the end of the day. The conservatory lacks insulation and temperature control; in winter, the temperature could be around 15C maybe lower, and in summer, it could be very hot. There is no humidity control either.

Over the last four years, I have been growing orchids, specifically phalaenopsis and dendrobiums. Initially, they thrived well, the only issue being excessive new plant growth on the old dendrobium canes. However, over the last year, I faced significant problems with phalaenopsis. Their roots tend to either dry out when above the substrate or rot  when within it (please refer to the attached photos 3 and 4)

My current watering routine involves watering the orchids once a week over the weekend by placing the pot into the basket with water and fertilisers (as shown in photo 1). Additionally, I usually spray water on the plants every Wednesday,

I am concerned that I may be doing something wrong for my orchids and would greatly appreciate any guidance on improving their current conditions.
